Abstract
【解決手段】食用油と、固体状醤油と、粒状植物性たん白とを含み、前記粒状植物性たん白が2質量%以上であり、前記固体状醤油及び前記粒状植物性たん白の総量が34質量%以下である醤油含有調味料とする。フリーズドライ醤油は、醤油と醤油諸味と賦形剤とを混合してフリーズドライ製法により製造する。このような醤油含有調味料は、様々な料理にかけたり、そのまま食べることもでき、フリーズドライ醤油の食感や旨さを楽しむことができるものである。

Description
本発明の原材料である食用油として菜種サラダ油(ボーソー油脂株式会社製。以下、全ての参考実施例、参考比較例で用いられる食用油は同社製である)を用いた。また、固体状醤油としてフリーズドライ醤油を用いた。
参考試験例1で用いた「3.36mmオン〜5mmパス」のフリーズドライ醤油と、食用油と、水分とを混和して参考醤油含有調味料を製造した。配合比率は表2の通りである。
参考試験例1で用いた「3.36mmオン〜5mmパス」のフリーズドライ醤油と、食用油と、粒状植物性たん白として粒状大豆たん白(商品名:ニューコミテックスA400;日清オイリオグループ株式会社製)と、水分とを混和して醤油含有調味料を製造した。配合比率は表3の通りである。なお、表3に示す醤油含有調味料は、粒状大豆たん白を2質量%含有している。
参考試験例1で用いた「3.36mmオン〜5mmパス」のフリーズドライ醤油と、食用油と、粒状植物性たん白として粒状大豆たん白(商品名:ニューコミテックスA400;日清オイリオグループ株式会社製)と、水分とを混和して醤油含有調味料を製造した。配合比率は表4の通りである。なお、表4に示す醤油含有調味料は、粒状大豆たん白を4質量%含有している。
試験例1で用いた粒状大豆たん白の代わりに、粉末状大豆たん白(商品名:ソルビー1500;日清オイリオグループ株式会社製)、又は粉末状小麦たん白(商品名:GPA小麦グルテン)を用いた醤油含有調味料を製造した。配合比率は表5の通りである。
Claims (5)
- 食用油と、固体状醤油と、粒状植物性たん白とを含み、前記粒状植物性たん白が2質量%以上であり、前記固体状醤油及び前記粒状植物性たん白の総量が34質量%以下であることを特徴とする醤油含有調味料。
- 請求項1に記載する醤油含有調味料において、
前記固体状醤油は、1質量%以上30質量%以下である
ことを特徴とする醤油含有調味料。 - 請求項1又は請求項2に記載する醤油含有調味料において、
水分が5質量%以下である
ことを特徴とする醤油含有調味料。 - 請求項1〜請求項3の何れか一項に記載する醤油含有調味料において、
前記固体状醤油の粒径が1mm以上10mm以下である
ことを特徴とする醤油含有調味料。 - 請求項1〜請求項4の何れか一項に記載する醤油含有調味料において、
前記固体状醤油は、醤油と醤油諸味と賦形剤とを混合してフリーズドライ製法により製造されたフリーズドライ醤油である
ことを特徴とする醤油含有調味料。
