Abstract
【解決手段】カロテノイド及びヘスペリジンを含有する容器詰炭酸飲料であって、容器詰炭酸飲料におけるヘスペリジンの含有量(mg/L)[H]を容器詰炭酸飲料の450nmにおける吸光度Aで除した値[H]/Aが48〜98であることを特徴とする容器詰炭酸飲料。容器詰炭酸飲料は、果実由来物及び/又は野菜由来物を含有することが好ましい。

Description
本発明の実施形態に係る容器詰炭酸飲料は、カロテノイド及びヘスペリジンを含有するものである。
水に、容器詰炭酸飲料における最終濃度が表1に示す濃度になるように、オレンジ果実由来物(混濁果汁(混濁果汁A)、果実磨砕物と混濁果汁との混合物(混合物B)及び透明果汁(透明果汁C)のうちいずれか一又は二以上)と、甘味料とを添加し、さらに容器詰炭酸飲料における酸度が0.19になるように酸味料を添加した後、98℃40秒間の殺菌を行い、その後5℃まで冷却した。得られた飲料原液に対して、炭酸ガスボリュームが表1に示す値になるよう、純水と無添加炭酸水とによって規定量にメスアップした後、洗浄殺菌済みのPETボトルに充填した。その後、コールドスポットで65℃10分が確保できる後殺菌を行い、容器詰炭酸飲料を得た(試料1〜6)。
試料1〜6の各容器詰炭酸飲料(サンプル)について、紫外可視分光光度計(島津製作所社製,UV−1800)を用い、450nmにおける吸光度を測定した。結果を表1に示す。
各サンプル10mLを50mLの褐色共栓遠心管に量りとり、ヘキサン:アセトン:メタノール(10:5:5)溶液10mlを加え、激しく振り混ぜた後、遠心分離し、ヘキサン層を分取した。得られたヘキサン層を減圧濃縮器に入れて減圧濃縮した後、ヘキサンを加えて5mLに定容し、この液をメンブランフィルターでろ過し、試験溶液とした。紫外可視分光光度計(島津製作所社製,UV-1600)を用い、セル長10mmにて、試験溶液の450nmにおける吸光度を測定した。次式により総カロテノイド量[C]を求めた。
式中、Eはヘキサン溶液におけるカロテノイドの450nmでの吸光係数(25.05L/g・mm)、Lはセル長(10mm)を表す。
結果を表1に示す。
試料1〜6の各容器詰炭酸飲料(サンプル)50mLを200mLの耐圧ビンに入れ、発泡がなくなるまで超音波処理を行い、さらに減圧下で発泡が収まるまで超音波処理を行い、各サンプルの前処理とした。

以下の条件は一例であり、装置によって検出感度が最高となるように設定した。
キャピラリ電圧:3kV
コーン電圧:55V
コリジョン電圧:35V
ソース温度:130℃
デソルベーション温度:350℃
コーンガス流量:50L/hr
デソルベーションガス流量:800L/hr
コリジョンガス流量:0.20mL/min
JAS法に基づく検査方法に準拠し、以下のようにして炭酸ガス量を測定した。試料1〜6の各容器詰炭酸飲料(サンプル)を恒温水槽に30分以上入れて静置して20℃に調整した後、サンプルを静かに取り出し、ガス内圧計を取り付けて、針先でキャップを穿孔し、一度活栓を開いてガス抜き(以下「スニフト」という。)し、直ちに活栓を閉じてから激しく振とうし、ゲージの指針が一定の位置に達したときの値(MPa)を読み取り記録した。
試料1〜6の各容器詰炭酸飲料(サンプル)について、官能評価試験を行った。かかる官能評価試験は、飲料の開発を担当する訓練された7人のパネラーにより、5℃に冷却保管されたサンプル30mLを試飲することにより行った。次に示す基準で、炭酸感/刺激感、油っぽさ、苦味、果実感の4項目に関し、5段階にて評価した。最も多かった評価を表1に示す。

容器詰炭酸飲料における炭酸ガスボリュームが表2に示す値になるように、純水と無添加炭酸水とを使用した以外は上述の試料3と同様に製造し、容器詰炭酸飲料を得た(試料7〜9)。
容器詰炭酸飲料における最終濃度が表3に示す濃度になるように、オレンジ果汁及び甘味料を使用した以外は試料1〜6と同様に製造し、容器詰炭酸飲料を得た(試料10〜15)。

前記容器詰炭酸飲料における前記ヘスペリジンの含有量(mg/L)[H]を前記容器詰炭酸飲料の450nmにおける吸光度Aで除した値[H]/Aが48〜98である
ことを特徴とする容器詰炭酸飲料。 - 前記容器詰炭酸飲料における前記カロテノイドの含有量(mg/L)[C]に対する前記ヘスペリジンの含有量(mg/L)[H]の比[H]/[C]が176〜1000であることを特徴とする請求項1に記載の容器詰炭酸飲料。
