ネオヘスペリジンジヒドロカルコン 砂糖の300倍の甘さ
スクラロース 砂糖の600倍の甘さ
ネオテーム 砂糖の8,000倍の甘さ
が挙げられる。
本開示に記載の飲料は以下の配合により調製される。
Claims (39)
- ステビオール配糖体、および
飲料中の前記ステビオール配糖体の持続性の苦味を低減しかつ飲料の口当たりを改善するのに有効な量で存在する羅漢果組成物
を含有することを特徴とする、飲料。 - 追加的な非栄養性甘味料をさらに含有することを特徴とする、請求項1に記載の飲料。
- 前記追加的な非栄養性甘味料がステビオールビオシド、1種以上のレバウディオサイド、およびこれらの組合せからなる群から選択される甘味料を含有し、前記羅漢果組成物が、前記飲料中の1種以上の非栄養性甘味料の少なくとも1つの味気ない味を低減するのに有効な量で存在することを特徴とする、請求項2に記載の飲料。
- 栄養性甘味料をさらに含有することを特徴とする、請求項1に記載の飲料。
- 前記羅漢果組成物が、羅漢果ジュース濃縮物、LHG粉末、およびこれらの組合せからなる群から選択されることを特徴とする、請求項1に記載の飲料。
- 前記羅漢果組成物が、羅漢果ジュース濃縮物および2〜99質量%のモグロサイドV含量を有するLHG粉末を含有することを特徴とする、請求項1に記載の飲料。
- 前記羅漢果ジュース濃縮物が約3%〜約12質量%のモグロサイドを含有することを特徴とする、請求項6に記載の飲料。
- 前記モグロサイドが、モグロサイドV、モグロサイドIV、(11−オキソ−モグロサイドV)、シアメノシドおよびこれらの組合せからなる群から選択されることを特徴とする、請求項7に記載の飲料。
- 前記ステビオール配糖体の質量パーセントが約0.04%〜0.08%であることを特徴とする、請求項1に記載の飲料。
- 前記全非栄養性甘味料の全質量パーセントが約0.15%〜約0.19%であり、かつ前記LHGジュース濃縮物の質量パーセントが約0.01%〜約0.5%であることを特徴とする、請求項2に記載の飲料。
- エリトリトールおよびD−タガトースの少なくとも1つをさらに含有することを特徴とする、請求項1に記載の飲料。
- コーラ風味、ジュース、果実風味、植物風味、スパイス、およびこれらの組合せからなる群から選択される香味料をさらに含有することを特徴とする、請求項1に記載の飲料。
- 前記羅漢果ジュース濃縮物が約6質量%のモグロサイドを含有することを特徴とする、請求項6に記載の飲料。
- 前記羅漢果組成物が約0.0006質量%〜約0.03質量%のモグロサイドを含有することを特徴とする、請求項5に記載の飲料。
- 前記モグロサイドが、モグロサイドV、モグロサイドIV、(11−オキソ−モグロサイドV)、シアメノシドおよびこれらの組合せからなる群から選択されることを特徴とする、請求項14に記載の飲料。
- 前記ステビオール配糖体の質量パーセントが約0.04%〜約0.08%であり、かつ前記LHG組成物の質量パーセントが約0.01%〜0.5%であることを特徴とする、請求項15に記載の飲料。
- 透明であることを特徴とする、請求項1に記載の飲料。
- 持続性の苦味を有する少なくとも1種のステビオール配糖体を、前記持続性の苦味を低減しかつ前記飲料の口当たりを改善するのに有効な量の羅漢果組成物と組み合わせるステップを含むことを特徴とする、飲料を製造する方法。
- 追加的な非栄養性甘味料をさらに含有することを特徴とする、請求項18に記載の方法。
- 前記追加的な非栄養性甘味料が、ステビオールビオシド、1種以上のレバウディオサイド、およびこれらの組合せからなる群から選択される甘味料を含み、ここで羅漢果組成物の前記量は前記飲料の1種以上の非栄養性甘味料の少なくとも1つの味気ない味を低減するのに十分であることを特徴とする、請求項19に記載の方法。
- 栄養性甘味料をさらに含有することを特徴とする、請求項18に記載の方法。
- 前記羅漢果組成物が、羅漢果ジュース濃縮物、2〜99質量%のモグロサイドV含量を有する羅漢果粉末、およびこれらの組合せからなる群から選択されることを特徴とする、請求項21記載の方法。
- 前記羅漢果組成物が羅漢果ジュース濃縮物を含有することを特徴とする、請求項18に記載の方法。
- 前記羅漢果ジュース濃縮物が約3%〜約12質量%のモグロサイドを含有することを特徴とする、請求項23に記載の方法。
- 前記モグロサイドが、モグロサイドV、モグロサイドIV、(11−オキソ−モグロサイドV)、シアメノシドおよびこれらの組合せからなる群から選択されることを特徴とする、請求項24に記載の方法。
- 前記ステビオール配糖体の質量パーセントが約0.04%〜約0.08%であることを特徴とする、請求項18に記載の方法。
- 前記全非栄養性甘味料の全質量パーセントが約0.15%〜約0.19%であり、かつ前記LHGジュース濃縮物の質量パーセントが約0.01%〜約0.5%であることを特徴とする、請求項19に記載の方法。
- エリトリトールおよびd−タガトースを前記低カロリー飲料と組み合わせるステップをさらに含むことを特徴とする、請求項18に記載の方法。
- 香味料を前記飲料に添加するステップをさらに含み、ここで前記香味料は、コーラ風味、ジュース、果実風味、植物風味、スパイス、およびこれらの組合せからなる群から選択されることを特徴とする、請求項18に記載の方法。
- 前記羅漢果ジュース濃縮物が約15%超のモグロサイドを含有することを特徴とする、請求項23に記載の方法。
- 前記羅漢果組成物が、約0.0006%〜約0.03質量%のモグロサイドを含有することを特徴とする、請求項18に記載の方法。
- 前記モグロサイドが、モグロサイドV、モグロサイドIV、(11−オキソ−モグロサイドV)、シアメノシドおよびこれらの組合せからなる群から選択されることを特徴とする、請求項31に記載の方法。
- 前記ステビオール配糖体の質量パーセントが約0.04%〜約0.08%であり、かつ前記LHG組成物の質量パーセントが約0.01%〜0.5%であることを特徴とする、請求項32に記載の方法。
- パッケージ、および
前記パッケージ中にパッケージされた甘味料であって、ステビオール配糖体と、飲料中での前記ステビオール配糖体の持続性の苦味を低減するのに有効な量で存在する羅漢果組成物との混合物を含有する甘味料
を含有することを特徴とする甘味料製品。 - 前記混合物が実質的に均質な乾燥混合物であることを特徴とする、請求項34に記載の甘味料製品。
- 前記混合物が液体であることを特徴とする、請求項34に記載の甘味料製品。
- 前記混合物を食品と組み合わせるための使用説明書をさらに含むことを特徴とする、請求項34に記載の甘味料製品。
- 前記甘味料の複数のパッケージを含有し、ここで各パッケージはその中に所定量の甘味料を有することを特徴とする、請求項34に記載の甘味料製品。
- 少なくとも1種の栄養性甘味料をさらに含有することを特徴とする、請求項34に記載の甘味料製品。
