Abstract
吸油の少ない低カロリーのパン粉は、油で揚げると食感がクリスピーになりやすかった。
【解決手段】
パン粉の原材料、小麦粉を強力粉に変え、大豆粉(生大豆粉)、ショートニング、ブドウ糖、食塩、イースト、イーストフード、アスコルビン酸、食物繊維は水溶性食物繊維の難消化性デキストリンとし、小麦由来加工澱粉、PH調整剤、乳化剤を混合したことにより食感がソフトになった。

Description
油で揚げた時パン粉の食感がソフトにすると食物繊維を少なく吸油性の抑制効果が十分でなく、食物繊維を多くすると油揚げした時食感が硬くなる。
又多糖類を使用すると(油を除き)低カロリーでなくなる。
Claims (1)
- 強力粉、イースト、ショートニング、イーストフード、食塩、ぶどう糖、水、水溶性食物繊維の難消化性デキストリン、小麦粉由来加工澱粉、pH調整剤及び乳化剤を主成分とする原料からパン粉を製造する方法。
