Claims (8)
- アルドースとグルコン酸からなるアルドン酸二糖類又はその塩類又はそのラクトンのいずれか一つ又はそれらの組み合わせを含有することを特徴とするベーカリー製品用品質改良剤。
- アルドン酸二糖類が、マルトビオン酸、ラクトビオン酸、セロビオン酸、イソマルトビオン酸、コージビオン酸、ニゲロビオン酸から選択された一つ又は組み合わせであることを特徴とする、請求項1に記載のベーカリー製品用品質改良剤。
- 塩類が、カルシウム塩又はナトリウム塩又はそれらの組み合わせであることを特徴とする、請求項1又は2に記載のベーカリー製品用品質改良剤。
- カルシウム塩又はナトリウム塩が、マルトビオン酸カルシウム、マルトビオン酸ナトリウム、ラクトビオン酸カルシウム、ラクトビオン酸ナトリウム、セロビオン酸カルシウム、セロビオン酸ナトリウム、イソマルトビオン酸カルシウム、イソマルトビオン酸ナトリウム、コージビオン酸カルシウム、コージビオン酸ナトリウム、ニゲロビオン酸カルシウム、ニゲロビオン酸ナトリウムから選択された一つ又は組み合わせであることを特徴とする、請求項1から3のいずれか一つに記載のベーカリー製品用品質改良剤。
- ラクトンが、マルトビオノラクトン、ラクトビオノラクトン、セロビオノラクトン、イソマルトビオノラクトン、コージビオノラクトン、ニゲロビオノラクトンから選択された一つ又は組み合わせであることを特徴とする、請求項1から4のいずれか一つに記載のベーカリー製品用品質改良剤。
- 穀類粉末に請求項1から5のいずれか一つに記載の品質改良剤を添加混合して調製したことを特徴とする、ベーカリー製品用生地。
- 生地が、冷凍生地又は冷蔵生地であることを特徴とする、請求項6に記載のベーカリー製品用生地。
- 請求項6又は7に記載のベーカリー製品用生地を成形・焼成して製造したことを特徴とする、ベーカリー製品。
