Abstract
Description
前記充填物が、
a.極性食用液体、及び
b.増粘剤
を含んでなり、
該中心充填組成物が、ずり減粘である、菓子組成物を提供する。本明細書の組成物は、摂取時に自由流動性液体の如く見えると同時に、向上した安定性、及び消費者による向上したフレーバー認識を可能にさせる口の中での向上した保持力を有する。
キサンチン;上記の式(I)中、R1、R2及びR3が全てH、
カフェイン;上記の式(I)中、R1、R2及びR3が全てメチル、
テオブロミン;R1はHであり、R2及びR3がいずれもメチル、並びに
テオフィリン;R1及びR2がいずれもメチルであり、R3がH、上述したものの塩、及びこれらの混合物、
が挙げられる。より好ましくは、前記キサンチン誘導体は、カフェイン、又はその塩を含む。
工程1 室温でグリセリンを好適な容器に量り取る
工程2 アントシアニン、タウリン+ガラナ粉末を添加し、分散するまで混合する
工程3 キサンタンガムを添加し、分散するまで混合する
工程4 40℃まで予熱したグルコースシロップ剤を添加し、混合しながら80℃まで該バッチを加熱する
工程5 加熱を停止し、スクロース+クエン酸を添加し、溶解するまで混合する
工程6 フレーバー+加熱剤を添加し、10分間混合する
工程1 室温でグリセリンを好適な容器に量り取る
工程2 アントシアニン、タウリン+ガラナ粉末を添加し、分散するまで混合する
工程3 キサンタンガムを添加し、分散するまで混合する
工程4 40℃まで予熱した高フルクトースグルコースシロップ剤を添加し、混合しながら80℃まで該バッチを加熱する
工程5 加熱を停止し、クエン酸を添加し、溶解するまで混合する
工程6 フレーバー+冷却剤を添加し、10分間混合する
工程1 室温でグリセリンを好適な容器に量り取る
工程2 アントシアニン、タウリン+ガラナ粉末を添加し、分散するまで混合する
工程3 キサンタンガムを添加し、分散するまで混合する
工程4 バッチを混合しながら80℃まで加熱し、キサンタンガムが完全に溶解するまで混合する
工程5 加熱を停止し、スクロース+クエン酸を添加し、溶解するまで混合する
工程6 フレーバー+加熱剤を添加し、10分間混合する
工程1 室温でグリセリンを好適な容器に量り取る
工程2 アントシアニン、タウリン+ガラナ粉末を添加し、分散するまで混合する
工程3 キサンタンガムを添加し、分散するまで混合する
工程4 水を添加し、バッチを混合しながら80℃まで加熱する
工程5 加熱を停止し、スクロース+クエン酸を添加し、溶解するまで混合する
工程6 フレーバー+加熱剤を添加し、10分間混合する
Claims (14)
- ドロップ(drop)の60重量%〜95重量%のハードボイルドキャンディー外殻(hard boiled candy shell)及び5重量%〜40重量%の充填物を含んでなる、菓子組成物であって、
前記充填物が、
a.極性食用液体、及び
b.増粘剤
を含んでなり、
該中心充填(center fill)組成物が、ずり減粘(shear-thinning)である、菓子組成物。 - 前記充填物が、37℃にて約0.5より大きいlog[(η@0.01s−1)/(η@250s−1)]を示す、請求項1に記載の菓子組成物。
- 前記増粘剤が、キサンタンガム、ジェランガム、ゼラチン、ヒドロキシプロピルメチルセルロース、カルボキシメチルセルロース、加工デンプン、好ましくはキサンタンガムを含む、請求項1又は2に記載の菓子組成物。
- 前記充填物が、該充填物の0.001重量%〜10重量%の増粘剤を含む、請求項1〜3のいずれか一項に記載の菓子組成物。
- 前記充填物が、該充填物の40重量%〜95重量%の極性食用液体を含む、請求項1〜4のいずれか一項に記載の菓子組成物。
- 前記極性食用液体が、水、多価アルコール、低分子量アルコール、及びこれらの混合物、好ましくは多価アルコールを含む、請求項1〜5のいずれか一項に記載の菓子組成物。
- 前記組成物が、キサンチン誘導体、又はその混合物、好ましくはカフェインを更に含む、請求項1〜6のいずれか一項に記載の菓子組成物。
- 前記組成物の0.01重量%〜10重量%のキサンチン誘導体、好ましくは0.1重量%〜5重量%のキサンチン誘導体を含む、請求項1〜7のいずれか一項に記載の菓子組成物。
- 冷却剤を更に含む、請求項1〜8のいずれか一項に記載の菓子組成物。
- 前記組成物が、該組成物の0.001重量%〜10重量%の冷却剤を含む、請求項1〜9のいずれか一項に記載の菓子組成物。
- 加温剤を含む、請求項1〜10のいずれか一項に記載の菓子組成物。
- 前記組成物が、該組成物の0.001重量%〜10重量%の加温剤を含む、請求項1〜11のいずれか一項に記載の菓子組成物。
- 前記組成物が、冷却剤及び加温剤のいずれも含み、好ましくは該冷却剤及び加温剤が前記組成物内の異なる別個の領域に配置され、前記冷却及び加温組成物が逐次的な放出特性を提供するのに適している、請求項1〜12のいずれか一項に記載の菓子組成物。
- 前記充填物が、該充填物の8重量%未満の水、好ましくは6重量%以下の水を含む、請求項1〜13のいずれか一項に記載の菓子組成物。
