Abstract
Description
様々なストリッピング技術により(例えば、米国特許第3,535,118号に記載される方法により得られる低温コンデンサー分画を使用して)焙煎粉砕コーヒーから得た濃縮アロマ分画中で、新たな硫黄化合物を同定した。この濃縮アロマ分画をジクロロメタンに溶解し、gc/オルファクトメトリーによって分析した。gc/ms分析については、トミナガら、1998年、J.Agric.Food Chem.、46巻、1044〜1048頁に従って、硫黄化合物を単離精製した。コーヒーにおいて新たに同定された硫黄化合物を表1及び図1に示す。異なる極性の2〜3本のカラム上での保持指数(n−アルカンに対して)、標準のコクロマトグラフィー、及び匂い嗅ぎ装置(sniffing port)上の芳香品質、並びに質量分析に基づいて化合物1〜3及び5を同定した。チオール4及び6は、質量スペクトル以外の前述のすべての基準に基づいて仮に同定した。
コーヒー飲料(焙煎粉砕アラビカコーヒー300gから、CTn90焙煎度)を、同位体標識したd3−3−メルカプト−2−ペンタノン(内部標準)でスパイクし、高真空下で蒸留を行い、ジクロロメタンで抽出した。p−ヒドロキシ水銀安息香酸によるチオールの単離及び誘導体化を前述の参照文献に従って行った。チオール1〜3(表1)をgc/msによって定量し、チオール5をgc/gc/msによって定量した。結果は、表2にまとめた。
Claims (11)
- 食物又は飲物中に提供されるコーヒーフレーバーの官能特性を増大させるのに十分な量のアロマ提供物質の使用であって、前記アロマ提供物質は、直鎖C4〜C5メルカプトアルカノン類又はその2種以上の混合物であることを特徴とする使用。
- 前記アロマ提供物質が、3−メルカプト−2−ブタノン、2−メルカプト−3−ペンタノン、3−メルカプト−2−ペンタノン、又はその2種以上の混合物であることを特徴とする、請求項1に記載の使用。
- 前記アロマ提供物質が、猫臭−硫黄臭、果物風味、焙煎風味、芳香特性を付与して、食物又は飲物の淹れたてコーヒー官能特性を増大させるのに十分な量で存在することを特徴とする、請求項1又は2に記載の使用。
- 前記アロマ提供物質が、4−メトキシ−2−メチルブタン−2−チオール、並びに/又は化合物4−メルカプト−4−メチル−2−ペンタノン、メチオナール、及び4メルカプト−4−メチルブチルホルマートのうちの1種若しくは複数と組み合わせて使用されることを特徴とする、前記いずれかの請求項に記載の使用。
- 前記硫黄化合物のうちの1種又は複数が、果物風味、ブラックカラント−硫黄臭、芳香特性を付与して、食物又は飲物の淹れたてコーヒー官能特性を増大させるのに十分な量で存在することを特徴とする、請求項4に記載の使用。
- 食物又は飲物中に提供されるコーヒーフレーバーの官能特性を増大させる方法において、食物又は飲物を提供すること、並びに少なくとも1種のアロマ提供物質を前記食物又は飲物のコーヒーフレーバーを増大させるのに十分な量で前記食物又は飲物に加える又は組み込むことを含む方法であって、前記アロマ提供物質は、直鎖C4〜C5メルカプトアルカノン類又はその2種以上の組合せであることを特徴とする方法。
- 増強された官能特性を有し、請求項6に記載の方法によって得られる食物又は飲物。
- 食物又は飲物中のコーヒーフレーバーの官能特性を増強するのに十分な量の消費可能成分及び少なくとも1種のアロマ提供物質を含む食物又は飲物であって、前記アロマ提供物質は、直鎖C4〜C5メルカプトアルカノン類、又はその2種以上の混合物であることを特徴とする食物又は飲物。
- 前記アロマ提供物質が、3−メルカプト−2−ブタノン、2−メルカプト−3−ペンタノン、3−メルカプト−2−ペンタノン、又はその2種以上の混合物であることを特徴とする、請求項7又は8に記載の食物又は飲物。
- 前記アロマ提供物質と、4−メトキシ−2−メチルブタン−2−チオール、並びに/又は化合物4−メルカプト−4−メチル−2−ペンタノン、メチオナール、及び4メルカプト−4−メチルブチルホルマートのうちの1種若しくは複数との混合物を含むことを特徴とする、請求項7から9までのいずれかに記載の食物又は飲物。
- 前記消費可能成分が、還元(reconstitutable)飲料、即席(ready−to−drink)飲料、アルコール飲料、パン生地をベースとする製品、冷凍菓子製品、チョコレート若しくはその類似物、シリアル、又は塗布可能な乳製品若しくは乳製品の代用品、或いはそれらのいずれかの混合物を含むことを特徴する、請求項7から10までのいずれかに記載の食物又は飲物。
