接着層は、限定されないが、チタン、クロム、ジルコニウム、またはそれらの合金を含めた材料でつくることができる。
チタンアルミニウム窒化物((Ti,Al)N)コーティングは、耐酸化性および耐磨耗性が高いため、乾燥および高速機械加工操作において一般に用いられる。一般的な(Ti,Al)Nコーティングは、50/50At%のTiAlターゲット(標的)を用いて付着される。(Ti,Al)Nコーティング上の最高作業温度は1450°Fに達することができる。(Ti,Al)Nコーティングは硬く、用いられる物理的蒸着法により、2600〜3000HV,0.05の微小硬度を有する。50/50(At%)の(Ti,Al)Nコーティングは、付着条件により、褐色または紫がかった色を有する。
本発明のコーティングの全体厚みは、食物用器具の用途により、一般に約0.5〜約20ミクロンである。TiCNのトップ層は、用いるならば、一般に約2.0ミクロン未満である。
各層は、食物用器具物品の熱源に接触する外面全体、例えば、平鍋の底および側面に、またはその一部のみ、例えば、平鍋の底のみに付着させることができる。
例として、コーティングを食物用器具物品に付着させる1つの方法を記載する。本技術分野における当業者によく知られているように他の方法または工程を用いることもできる。
シートを800〜1200Vの負電圧にすることによってグロー放電させて、シートをミクロ−クリーンにする。
ブランクを被覆し、ブランクを平鍋に浅絞り成形することによる食物用器具物品の製法は、絞り成形時の半径領域の表面組織変化を避けるため、半径を有する形の食物用器具物品に非常に適している。このプロセスでは、表面仕上げは一般に10〜16ミクロインチである。10ミクロインチ未満の高度に磨かれた表面仕上げは、浅絞り成形の非常に大きな半径を有する食物用器具物品に用いることができる。
厚さが0.8インチの8インチ×8インチの304ステンレス鋼ブランクを上記の方法を用いて被覆した。ブランクは市販の4番および8番鏡面仕上げを有していた。被覆ブランクを6インチ直径の平鍋に絞り成形した。
本発明の食物用器具物品を、本発明により製造された平鍋の中で水を直接ガスの炎および電気発熱体上で沸騰させることによって、熱安定性および耐変色性について試験した。調理道具の被覆表面を約1.2から2時間、連続加熱した。これは一般的な料理条件と比較するとかなり厳しい試験である。この手順を2〜3回繰り返した。結果は表1に示す。

本発明の多層セラミックコーティングは熱に安定な色を有するコーティングを提供する。コーティングは、ガスの炎および電気発熱体に長時間直接曝されても、高い耐酸化性および耐変色性を示す。食物用器具物品は容易にきれいにすることができ、それらの銅風色または他の色を維持する。本発明の多層コーティングは成形中、半径領域において十分に接着し、そしてまた直接加熱でも良好な耐変色性を示す。本発明のコーティングは、シートまたはブランクを被覆し、次いで、シートまたはブランクを平鍋に成形する能力を提供する。これは個々の平鍋を被覆するよりも経済的であるが、所望ならばそのように行うこともできる。
