Claims (1)
- 【特許請求の範囲】 1.天然資源からのAFP類の回収方法であって、前記方法は、 a)AFPを含む汁を天然資源から分離し、 b)天然資源又はAFPを含む汁を少なくとも60℃の温度へ加熱処理し、 c)不溶性画分を除去する、 工程を含む、方法。 2.工程a及びbが(いずれかの順序で)、工程cの前に行われる、請求項1記 載の方法。 3.60℃で1時間、80℃で1時間、又は100℃で10分間熱処理した後、氷の再結晶 阻害特性において著しい減少を示さないことによって確認される熱安定性を有 するAFP類。 4.−40℃へ急速冷凍し、続いて−6℃で1時間貯蔵した後、熱処理された水中の AFPの組成物の氷結晶の大きさが、熱処理されない同一のAFPの氷結晶 の大きさよりも5μm未満しか大きくない、請求項3記載のAFP類。 5.−40℃への迅速な冷凍の後−6℃で1時間貯蔵した水中のAFPの組成物の氷 結晶の大きさが、15μm以下である、請求項3乃至4記載のAFP類。 6.25kDa、35kDa、及び65乃至75kDaの分子量を有するタンパク質を一 つ以上含む、請求項3又は4記載のAFP類。 7.25kDaのAFPが、 ALA−THR−ILE−THR−ALA−VAL−ALA−VAL−LE U−LYS−X−THR−VAL−GLU−VAL−X−ILE−VAL− PRO−THR、 35kDaのAFPが、 ALA−GLN−PHE−THR−ILE−THR−ASN−LYS−CY S−GLN−PHE−THR−VAL−TRP−ALA−ALA−X−VA L−PRO、 65乃至70kDaのAFPが、 X−GLU−GLN−PRO−ASN−THR−ILE−X−GYL−TH Hと実質的に相同であるN末端配列を含む、請求項6記載のAFP類。 8.少なくとも一つの請求項7記載のAFP類をコードすることのできる核酸配 列を含むベクター。 9.少なくとも一つの請求項7記載のAFP類を発現することのできる形質転換 された有機体。 10.0.0001乃至0.5重量%の、請求項3記載のAFPを含む、冷凍菓子製品。 11.請求項3記載のAFPを含む、請求項10記載の冷凍菓子製品の製造に使用す るのに適するプレミックス。 12.0.0001乃至0.5重量%のAFPを含む配合されたミックスの調製を含む冷凍 菓子製品の製造法であって、前記AFPは、60℃で1時間、80℃で1時間、又 は100℃で10分間熱処理し、静置条件下でミックスを冷凍した後、氷の再結晶 阻害特性において著しい減少を示さないことによって確認される、熱安定性を 有する、方法。
