Abstract
1431781 Chocolate UNILEVER Ltd 28 March 1973 [29 March 1972] 14837/72 Heading A2B [Also in Division C5] A process for preparing chocolate comprising the incorporation of an SOS/POS-fat (defined) and a hard fat or a blend of hard fats into a chocolate making mix in such proportions that the POP/POS/SOS-composition of the total hard fat of the resulting chocolate is within any one numbered area defined in Figures 18, 19 or 20, the hard fat or blend of hard fats being such that, replacement of the SOS/POS-fat by the same weight of the hard fat or blend of hard fats would give a chocolate whose total hard fat has a POP/POS/SOS-composition outside the area. P# palmityl, O# oleyl and double bond isomers thereof, S# stearic, POS# a triglyceride containing P, O and S residues. Also disclosed is a hard fat replaced which on incorporation in a chocolate making mix is capable of giving a chocolate as made by the above process and which consists of a mixture of a natural, high POP/POS/SOS fat (defined) and the SOS/POS fat.
