Claims (13)

1. Postupak za proizvodnju pasiranih, kuhanih prehrambenih proizvoda od sirovog materijala u komadima, koji sadrži slijedeće korake: - pred-usitnjavanje komada sirovog materijala u jedinici za pred-sjeckanje (1), - kuhanje pred-usitnjenog sirovog materijala u neprekidno punjenom postrojenju za kuhanje (6), - završnu obradu kuhanog proizvoda u jedinica za konačnu obradu (12), naznačen time da se prije kuhanja, komadi sirovog materijala sijeku u male komadiće u jedinici za pred-sjeckanje (1) pomoću prvog sustava rotirajućih noževa (2) tako da komadi sirovog materijala postanu masa koju je moguće pumpati, te da se završna obrada kuhanog proizvoda provodi pomoću drugog sustava noževa (13) u jedinici za konačnu obradu (12).
2. Postupak prema zahtjevu 1, naznačen time da se masa koju je moguće pumpati miješa i grije izravno s parom u neprekidno punjenom postrojenju za kuhanje (6).
3. Postupak u skladu s bilo kojim od prethodnih zahtjeva, naznačen time da neprekidno punjeno postrojenje za kuhanje (6) tvori zatvoreni sustav, te je spriječen kontakt prehrambenih proizvoda koji se trebaju kuhati s okolnim zrakom.
4. Postupak prema zahtjevu 3, naznačen time da prehrambeni proizvod koji se treba obraditi ostaje odvojen od okolnog zraka tijekom cjelokupnog postupka.
5. Postupak u skladu s bilo kojim od prethodnih zahtjeva, naznačen time, da se nakon kuhanja, prehrambeni proizvodi hlade na ispod 95°C pomoću rashladnog sustava.
6. Postupak u skladu s bilo kojim od prethodnih zahtjeva, naznačen time da se barem jednom od sustava rotirajućih noževa (2, 13) regulira frekvencija.
7. Postupak u skladu s bilo kojim od prethodnih zahtjeva, naznačen time da se pritisak proizvoda (Pprod) mjeri na ulazu sustava pred-sjeckanja (1).
8. Postupak u skladu s bilo kojim od prethodnih zahtjeva, naznačen time da se brzina punjenja sirovog materijala regulira na temelju izmjerenog pritiska proizvoda (Pprod).
9. Uređaj za proizvodnju pasiranih, kuhanih prehrambenih proizvoda iz sirovog materijala u komadima, koji ima sustav rotirajućih noževa (2, 13) i postrojenje za kuhanje (6), naznačen time, da su također predviđene a) jedinica za pred-sjeckanje (1) koja ima prvi sustav rotirajućih noževa (2) za obradu komada sirovog materijala u masu koju je moguće pumpati, te b) pumpa (8) za transportiranje pred-sjeckanog sirovog materijala iz jedinice za pred-sjeckanje (1) u postrojenje za kuhanje, i da je c) postrojenje za kuhanje neprekidno punjeno postrojenje za kuhanje (6), te d) jedinica za konačnu obradu (12) s drugim sustavom rotirajućih noževa (13) je predviđena za konačnu obradu prehrambenog proizvoda.
10. Uređaj prema zahtjevu 9, naznačen time da cjelokupni uređaj tvori zatvoreni sustav, tako da obrađeni prehrambeni proizvodi, nakon dovođenja do prvog sustava noževa (2), ne dolaze u kontakt s okolnim zrakom tijekom cjelokupnog ostatka proizvodnog postupka.
11. Uređaj prema zahtjevu 9 ili 10, naznačen time da sustav rotirajućih noževa (2) jedinice za pred-sjeckanje (1) ima barem stator (30; 64, 65), rotor (32; 62, 63) i otpremni disk (34).
12. Uređaj u skladu s bilo kojim od prethodnih zahtjeva, naznačen time da drugi sustav rotirajućih noževa (13) jedinice za konačnu obradu (12) ima razmake noževa (20) koji su manji od 0.05 mm.
13. Uređaj u skladu s bilo kojim od prethodnih zahtjeva, naznačen time de je osjetnik pritiska (66) postavljen na ulaz jedinice za pred-sjeckanje (1).
