Claims (13)
1. Soj Streptococcus thermophilus, gdje je taj soj onaj Streptococcus thermophilus soj pohranjen prema sporazumu iz Budimpešte 07. listopada 2008. u ime Danisco Deutschland GmbH pri Deutsche Sammlung von Mikroorganismen und Zellkulturen (Njemačka kolekcija mikroorganizama i staničnih kultura) pod brojem DSM 21892 ili njegov mutant, pri čemu genom tog soja mutanta obuhvaća CRISPR lokus koji obuhvaća sekvencu nukleotida izabranu iz skupine koja sadrži SEQ ID N°2, SEQ ID N°3, SEQ ID N°4, SEQ ID N°5, SEQ ID N°6, SEQ ID N°7, SEQ ID N°8, SEQ ID N°9, SEQ ID N°10, SEQ ID N°11 i SEQ ID N°12 i gdje mlijeko koje fermentira pomoću tog soja mutanta ima viskoznost veću od oko 55 Pa.s mjereno Testom A i Caber relativno vrijeme razgradnje manje od oko 0,015 sekundi mjereno Testom B.
2. Soj prema zahtjevu 1, gdje genom tog soja obuhvaća CRISPR lokus sa sekvencom nukleotida SEQ ID N°1 ili njezinim derivatom koji je barem 90% identičan prema SEQ ID N°1.
3. Soj prema zahtjevu 1 ili 2, gdje je taj soj neosjetljiv na fag.
4. Soj Streptococcus thermophilus pohranjen prema sporazumu iz Budimpešte 07. listopada 2008. u ime Danisco Deutschland GmbH pri Deutsche Sammlung von Mikroorganismen und Zellkulturen (Njemačka kolekcija mikroorganizama i staničnih kultura) pod brojem DSM 21892.
5. Bakterijska smjesa koja sadrži soj definiran prema bilo kojem od zahtjeva 1-4.
6. Postupak pripreme fermentiranih mliječnih proizvoda, gdje taj postupak obuhvaća fermentaciju mliječnog supstrata pomoću soja definiranog prema bilo kojem od zahtjeva 1-4 ili pomoću bakterijske smjese prema zahtjevu 5.
7. Postupak prema zahtjevu 6, gdje je mliječni supstrat prirodno ili rekonstituirano mlijeko, obrano ili drugačije, ili medij na bazi proizvoda mliječnog porijekla.
8. Postupak prema zahtjevu 6 ili 7, gdje mliječni supstrat obuhvaća stvari koje se obično koriste za pripremu mliječnih deserta, posebno krutih stvari kao što je voće, čokoladni komadići ili žitarice; zaslađeni proizvodi ili tekuće čokolade.
9. Mliječni proizvod koji se može dobiti postupkom kako je definiran u bilo kojem od zahtjeva 6-8.
10. Uporaba soja definiranog prema bilo kojem od zahtjeva 1-4 ili bakterijske smjese prema zahtjevu 5 za pripremu fermentiranih mliječnih proizvoda.
11. Mliječni proizvod koji sadrži soj definiran prema bilo kojem od zahtjeva 1-4 ili bakterijsku smjesu prema zahtjevu 5.
12. Mliječni proizvod prema zahtjevu 10 ili 11, gdje je taj mliječni proizvod fermentirano mlijeko, jogurt, zrelo vrhnje, sir, svježi sirevi, mliječni napitak, koncentrat (retentat) mliječnog proizvoda, obrađeni sir, kremasti desert, zrnati sir ili dječje mlijeko.
13. Mliječni proizvod prema zahtjevu 9, 11 ili 12, gdje taj mliječni proizvod sadrži mlijeko životinjskog i/ili biljnog porijekla.
