Abstract

Στην παρούσα εφαρμογή το λιποσωμικό σύστημα είναι πλήρως βρώσιμο, αποτελούμενο από δομικά υλικά επιτρεπτά από τον Κώδικα Τροφίμων. Συγκεκριμένα, αποτελείται από παράγωγα φυτικών λιπαρών οξέων, φυτοστερολών, γαλακτοματοποιητών και φυτικών κηρών. Η εκλογή και η αναλογία των ανωτέρω λιποσωματικών δομικών υλικών ρυθμίζεται έτσι ώστε να μένει το σύστημα αναλλοίωτο στις απαιτήσεις της θερμικής επεξεργασίας (παστερίωσης) των συγκεκριμένων τροφίμων αλλαντοποιίας, γαλακτοκομικών και ιχθυοσκευασμάτων. Με το ανωτέρω λιποσωμικό σύστημα επιτυγχάνουμε την αντικατάσταση ζωικού λίπους με βρώσιμα έλαια και συγκεκριμένα ελαιόλαδο. Η διασπορά του ελαιόλαδου είναι ομοιόμορφα κατανεμημένη σε μικροσκοπικές ποσότητες στο βρώσιμο λιποσωμικό σύστημα και συγκρατείται σταθερά στο πλέγμα του προϊόντος υπό ατμοσφαιρική πίεση περιβάλλοντος χωρίς χρήση κενού. Είναι επίσης εφικτός ο εγκλωβισμός ζωικών λιπαρών στο ίδιο βρώσιμο λιποσωμικό σύστημα χωρίς φωσφολιπίδια για αντικατάσταση του ραχιαίου λίπους με κοινό λίπος σε σαλάμια.
