Abstract

863,469. Conditioning and coating chocolate. SOLLICH, R. July 2, 1957 [July 3, 1956], No. 20861/67. Class 28 (1). Cakes 7 on a conveyer are coated with chocolate by a swinging depositor 9, some or all of the drips b<SP>1</SP> being caught and collected into a chamber 11 leading to a mixing chamber 13 where a feed screw 14 adds unconditioned chocolate from the storage 2. The mixture then may pass through a cooler 15 controlled by a thermometer 17 in the feed pipe 16 to the depositor 9. All the drips first pass through a vibrating screen 18, some of the drips b<SP>11</SP> falling directly into the storage tank 2 which has a steam jacket 3 and an agitator 4. The depositor is partially closed by a bottom 19 leaving slots 20 small enough to build up an air pressure in the depositor so that the chocolate strikes the cakes 7 with some force. The storage tank 2 is fed from a hopper 21. By mixing some of the drips of conditioned chocolate with the unconditioned chocolate in 2, a less crystalline chocolate coating is obtained.
