Abstract

Ultrasonic vibrations are used to render milk free from fat separation when thawed after storage in the frozen condition. The vibrations may be produced by a vibrating crystal and transmitted by means of a probe inserted into the milk. The preferred range of frequency is 0.75-2.0 megacycles/sec.; using a power of 150-200 watts per gallon of milk, treatment times of 5-2 minutes are effective.ALSO:Milk free from fat separation when thawed after storage is obtained by subjecting the milk to vibrations at ultrasonic frequency and then freezing within an hour. According to an example, milk is pasteurized and immediately treated for 5 minutes with ultrasonic vibrations at 1-1.3 megacycles/sec. and a power of 150 watts per gallon of milk; the treated milk is packed in polythene containers which are then heat-sealed and immersed in a refrigerant liquid at 4-5 DEG F. so that complete freezing is achieved with 40 minutes.
