Abstract

In ripening cream by the incorporation of a bacterial culture before churning the cream to butter, the cream is cooled automatically upon its attainment of the required acidity. Apparatus for the procedure involves a device for measuring conductivity or pH of the cream and a switch which actuates means for supplying a cream-cooling medium and actuates a stirrer for the cream upon attainment by the cream of a predetermined conductivity or pH.
