Abstract

733,298. Mincer. KROTZ, A. Nov. 10, 1953 [March 28, 1953; April 17, 1953], No. 31131/63. Class 28 (2). The annular rotated meat trough 56 of a mincer is provided with two or more overhung cutter shafts. Each shaft has an external sleeve rotated in the opposite direction from its concentric core shaft and also carries cutters which create a scissors like action with the blades of its concentric cutter. The cutters however may rotate in the same direction. The spacing of such co-operating cutter sets may vary from 0 to 2 millimetres for fine cutting to 10 to 30 millimetres for coarse cutting. One of the cutter sets in the trough may be adjusted for rough cutting, the other set being adjusted for subsequent fine cutting. Fig. 2 shows at its lower half several cutters 10, 11 mounted on a neck 8 widely spaced from oppositely rotated co-operating cutters 23, 24. The neck 8 is externally hexagonal to receive the forked end 13, Fig. 7, of the cutters 10 and 11 thereby allowing the cutters to be spaced like radii on the shaft 1. (The cutter 12, Fig. 7, is a special cutter with a lug 42 for peripheral cutting.) The cutters 10 and 11 are secured by a screwed on or pressed on clamp ring 15 secured by a grub screw 16. The cutters 23, 24 likewise secured on the neck 26 of a hub 17 having dogs, or radial grooves or keys 18 to receive the drive from the outer shaft 2. The upper half of Fig. 2 shows alternative closelyspaced cutters 33, 37 of the shape shown in Fig. 8 secured by countersunk screws 34 on flanged rings 32 and 36 respectively. Such cutters are suitable for cutting meat tendons, and have co-operating cutting edges 38, Fig. 9. To avoid adjustment of the cutters various sets of cutters are mounted on various sleeves 5 and-35 respectively so that the sleeves can be slid on and off their drive shafts 1 and 2 and clamped thereon by nuts 30 and 19 respectively. Fig. 5 shows a number of cutters 12 with spacers 43 similarly mounted on the inner shaft 1 there being no co-operating cutters on the outer shaft 2. The various cutter assemblies may be driven at different speeds by different independent motors 40 (Fig. 4, not shown), or one or more assemblies may be stationary. The bowl trough may have a motor for independent rotation at any selected speed.
