Abstract

In storing potatoes without sprouting, the carbon dioxide content of the air of the store is kept below 1 per cent. and the air contains a small proportion of the volatile products of potato respiration and/or the vapour of an aliphatic alcohol having less than 11 carbon atoms in the molecule. Carbon dioxide formed by the potatoes is removed from the store by renewing or scrubbing the air, continuously or at short intervals. Use of n-amyl alcohol or commercial amyl alcohol in the concentration 0.0005-0.001 g./litre is referred to, wicks supplied with the alcohol being placed in a stream of air entering the potato store.
