Abstract
Milk powder is stabilized against autoxidation by mixing gallic acid esters of alcohols containing six or more carbon atoms with the milk before, during or after evaporation of water. The amount of ester used is preferably less than 1 per cent, and particularly from 0.001 to 0.005 per cent, of the original weight of the milk. Specification 542,833, is referred to.
