Abstract

Legumes and cereals, i.e. pod-free beans or threshed grain prior to milling are subjected to vacuum treatment in a heated and closable vessel to expel air and then to live steam until a pressure about 10 lbs. per sq. inch above atmospheric pressure is produced in the vessel which is maintained for a few minutes, the steam is then blown off under pressure, air is admitted and the material dried to the required state. Preferably 1/2 -1 per cent, based on the raw material, of a feebly acidic and non-injurious inorganic salt, e.g. acid calcium phosphate or acid potassium phosphate in powder form is added to the raw material prior to the vacuum stage and mixed by rotation of the vessel.
