[Class 126] [Also in Group XIII] A water - heated jacketed cabinet for keeping cooked food warm and moist is provided with a vent in the jacket allow-. ing steam therefrom to escape into the cabinet, the amount of steam thus escaping being limited by controlling thermostatically the water heater to keep the temperatures in the jacket and in the cabinet constant and in equilibrium. The U-shaped annular steam jacket 28, 30 of the cabinet 2 is heated by an electric heater 52 controlled by a thermostat 24 and escape of steam is provided by a vent 36.
