Abstract

PURPOSE: To make it possible to select the smoking means, e.g. cold, warm, hot, and roast smoking, by changing the temperature in the smoking vessel.
CONSTITUTION: Smoke is produced from the smoking substances 3 in the smoke producer A comprising the unit 14 heated by the source 2 at a constant temperature. The heat from the unit 14 is supplied to heat the smoking vessel 1 comprising the producer A. When the producer A is partly exposed outside the vessel 1, the heat is partly radiated outside to reduce the temperature of the vessel 1. The temperature depends on the distance between the wire gauze 5 or the hangers 6 to hold the food and the source 2. Thus, the smoking process can be selected from warm, hot, and roast smoking methods according to the taste desired. The temperature of the source 2 will not change, thus producing a constant amount of smoke always without deteriorating the taste.
