Abstract

Material containing proteolytic enzyme is obtained by treating fruit juice containing proteolytic enzyme, e.g. pineapple juice, with 5--50 per cent, usually 25--30 per cent, by weight of a soluble metallic or ammonium salt of an inorganic acid and separating the precipitate thus obtained. Salts specified are sodium chloride, potassium chloride, sodium sulphate, ammonium sulphate, ammonium phosphate, calcium acid phosphate, aluminium sulphate and sodium tungstate. The enzyme material so obtained may be mixed with other enzyme material; it may be used for the desizing of textile fibres, particularly rayon filaments, with or without a diastatic enzyme such as malt extract; and it may be mixed with flour and used in the preparation of bread as a gluten improver. Reference has been directed by the Comptroller to Specification 19178/90, [Class 2].ALSO:Material containing proteolytic enzyme, which may be mixed with flour and used in the preparation of bread as a gluten improver, is obtained by treating fruit juice containing proteolytic enzyme, e.g. pineapple juice, with 5-50 per cent, usually 25-30 per cent by weight of a soluble metallic or ammonium salt of an inorganic acid and separating the precipitate thus obtained. Salts specified are sodium chloride, potassium chloride, sodium sulphate, ammonium sulphate, ammonium phosphate, calcium acid phosphate, aluminium sulphate and sodium tungstate. The enzyme material so obtained may be mixed with other enzyme material. Reference has been directed by the Comptroller to Specification 19178/90, [Class 49].
