Abstract

Sucrose is rendered non-fermentable by yeast by treating it at about 70 DEG F. with lactic acid of between 40 and 70 per cent by weight. For example, the sugar may be treated with 5 per cent of a 50 per cent solution of lactic acid. A small amount of this composition added to the flour in making bread gives a sweeter product, acts as an anti-toxin, and prevents rope.
