Abstract

Puffed products are obtained from cereals having a fat content of less than 4,5 per cent by subjecting the raw cereals in an otherwise unheated closed container to the action of superheated steam at a pressure of at least 100 lb. per square inch and at least 25 DEG F. of superheat for a period of the order of five minutes or less, the pressure then being suddenly reduced to puff the cereal. In a specific example, maize with a fat content of less than 4,5 per cent is treated with steam at a gauge pressure of about 220 lb. per sq. inch and with about 150 DEG F. of superheat for about one minute after line pressure has been attained. The container is then opened to release the pressure. Salt may be added to the grain before the steam treatment, a suitable proportion being about one ounce of salt to each pound of maize.
