Abstract
Raw alcoholic liquors are matured by treatment with an oxidizing agent, a preliminary ageing in the presence of this agent being carried out for a short time, for example, two or three days, and preferably at elevated temperatures such as from 120 DEG F. to 150 DEG F., whereupon an agent adapted to decompose any remaining oxidizing agent and to bleach the liquor is added, and the liquor is allowed to undergo a final ageing, preferably carried out in successive steps at elevated temperatures, for example, at temperatures of about 120 DEG F., 100 DEG F., 80 DEG F. and temperatures varying between 80 DEG C. are normal room temperatures. The oxidizing agent may comprise a strong acid and an oxygen yielding compound, for example, sulphuric acid and potassium permanganate, sodium permanganate, perchromates, perchlorates, or perborates. The agent adapted to decompose the remaining oxidizing agent and to bleach the liquor may be an oxygen generating compound, such as hydrogen peroxide. The ageing is preferably effected in charred oak vessels, and the storage room is preferably warmed by means of hot air blowers located at diametrically opposite points of the room.
