Abstract
Pectose-containing materials, such as apple pomaces or beet slices are hydrolyzed by treatment below 100 DEG C. in a medium having a pH value between 4 and 5 to prevent decomposition of the pectin formed. Preferably, tartaric or citric acids, or an acid phosphate are employed to effect the hydrolysis. The juices obtained are concentrated at about 50 DEG C., the pH value not being allowed to fall below 3 and the pectin then precipitated by the addition of an alcohol mixture containing over 70 per cent of alcohol, to prevent the co-precipition of arabanes, galactones and other impurities. The gel-like precipitate is drained and then dried by immersion in absolute alcohol. The product is then heated at about 80 DEG C. to eliminate this solvent, and then pulverized.
