Abstract

Cutting and slicing vegetables.-A punch b carrying a pressure head e with projections d is reciprocated in a collar a on a main frame i by operating a hand-lever q that actuates a toothed segment meshing with a rack on the punch. The substance to be cut is placed below the head e against a guide f and above a network of knives g. The knives g are removably mounted on a bracket h projecting from the frame i : a box 6 with a drawer 7 is arranged below the cutting device to receive the chips. The ledge h also supports a cross-cutting knife removably mounted on a frame n with a handle o and adapted to cut on both its forward and rearward movements. To adjust the thickness of the slices cut by the crosscutting knife a ratchet wheel w actuated by the lever q is secured to a crank x on which is pivoted a screwed rod y carrying a piston that reciprocates in a pivoted cylinder z. A stop 5 adjustable on the rod controls the length of inward movement of the piston and so the length of downward movement of the head e for each operation of the lever q. When the knives g are used without the crosscutting knife the pawl by which the lever q actuates the ratchet-wheel w is raised by pressing on a pawl lever t.
