Slicing meat. - In an apparatus for slicing meat &c., a revolving circular knife is passed to-and-fro across the surface to be cut by a combination of toothed wheels with a rack or racks, and a quick-return motion may be provided for the knife; special means are provided for holding the meat, and for allowing the knife to be sharpened. (1) The holding-device comprises a table A having vertical racks B provided with a gripping-bar D. This bar carries at one end a spring collar D<2> and a pawl D<5> and at the other end a trip pawl D<6> and operating-handle D'. To clamp the meat, the collar is first placed in position, the other end is pressed down by the handle, and the trip pawl is engaged. (2) The table A is advanced by means comprising a lever L, the extremity of which is engaged at each reciprocation of the knife, and which is connected by a link L<2> to a pawl L<5> engaging a ratchet wheel. M<1> on the extremity of a screw-threaded shaft upon which the table is mounted. (3) Means for regulating the thickness of the slice comprises a plate M which may be clamped in any desired position in order to mask certain of the ratchet teeth so as to render the pawl L<5> inoperative during a portion of its stroke. (4) The knife K is mounted on the shaft H of the hand-wheel W<1>, and its motion, with or without a quick return, is obtained from a pinion 1 engaging a fixed rack R. In the arrangement shown, this pinion is made fast with the shaft H during the return of the knife by a one-way clutch 7. During the cutting or forward stroke, the clutch 7 is free and the pinion 1 is driven from a second oneway clutch 10 through a reducing train 2, 5, 4, The gearing is enclosed in a casing which slides on a hearer G. In a modification, the rack pinion is mounted on a countershaft and is driven at a high or low speed relatively to the knife through one of two trains of gearing. (5) When it is desired to sharpen the knife, a stop S is raised and the pinion 1 is run off the rack R on to a flat portion R'. The knife is then rotated against an emery wheel W.
