Cutting and slicing vegetables.-A machine for cutting up potatoes &c. into pieces of various forms comprises a stamp and die and a rotary cutter with means for varying the relative speed of the stamp and rotary cutter. In one form the stamp 28, Figs. 1 and 2, is power-actuated by means of a worm 3 and worm-wheel 6 and a cam disc 8, formed to give a quick-return motion, which coacts with a roller 9 on the rod 10 of the stamp, a second roller 11 working in guides 12. The worm 3 is clutched to its shaft 1 by depressing a foot-lever 44, and is released by a spring after one stroke of the stamp, when a gravity pawl 39 is lifted by the end of the rod 10 striking a lever 41. The clutch can be released at any time by a hand-lever 52. The potato, prepared by cutting off the ends by means of adjustable parallel knives 46, Fig. 7, and a hand-operated presser 48, is placed upon a die 22 of rectangular or other form with an inturned cutting-edge 23 to remove the outer parts of the potato which are severed by radiating blades 25. At the next stroke of the stamp the potato within the die 22 is forced through the contracted outlet 24 to the lower die 28 having downwardly-diverging crossed blades 29. Both dies are interchangeable and the lower may be dispensed with for cutting to certain shapes. Beneath the lower die a rotary cutter 32 is arranged carrying two or more helicoidal blades 33 interchangeably attached to the shaft 19 which is driven by bevel gears 18 from a shaft 17 connected by variable geared pinions to the shaft 1. In another form, Fig. 5, the stamp 20 is hand-operated and the rotary cutter is driven by means of a rack 54 and pinion 55, variable ratio gearing 56, 57, a unidirectional clutch 56a and bevel-gears 60.
