Abstract

200,152. North, C. E. March 17, 1922. Butter and butter substitutes.- Milk fat cr butter oil is obtained by whipping, at high speed, or by similarly treating cream obtained from milk by treatment in an ordinary cream separator and then treating the frothy mass with sufficient hot water to melt the butter oil and cause it to float. This mixture is then passed through an ordinary centrifugal separator to separate the oil.
