Abstract

127,484. Beer, W. J. Oct. 4, 1918. Cheese.-A process for recovering and making soft cheese of the butter fats, casein, and other food substances contained in the whey discharged from the heating-vat in the ordinary methods of making cheese consists in running the whey into a jacketed vat, allowing it to ripen therein by acidity, heating to about 200‹ F. by passing steam through the jacket, and subsequently separating the curd formed and expressing liquid from it.
