Abstract

20,058. Fleming, C. H. Aug. 29. Clarifying beverages.-The secondary fermentation and conditioning of beer &c. that takes place in the retailers' or other cellars, prior to drawing-off for consumption, is carried out in an atmosphere of carbon dioxide which is supplied to the upper parts of the casks at a pressure of 10-50 inches of water. The pressure is retained during the drawing-off of the beer.
