Abstract

Sterilizing and preserving beverages. - The pasteurization, secondary fermentation, decantation, and bottling of effervescent wines or like fermented liquids are carried out under constant pressure of carbon dioxide or inert gas. The treatment is effected in steel vessels, autogenously soldered, and lined with glass. The vessels have dome-shaped upper ends and apertures at the bottom, closed by clamped silvered ferro-nickel covers, through which pass pipes for the admission of wine and carbon dioxide, and for the withdrawal of wine. The pipe for the admission of the wine has two cocks, the space between which serves for taking samples. The treatment is carried out in a series of four vessels 20, 21, 22, 23 arranged at different levels and connected by pipes 12 with a gas supply 35, so that the liquid may be decanted from one vessel to another without agitation as described in Specification 7734/08, [Class 21, Casks &c.]. The wine is pasteurized in the vessel 20 by a steam coil 30, secondary fermentation is carried out in the vessel 21, the wine is cooled in the vessel 22 by a refrigerating-coil 31, and passed into the vessel 23 from which it passes to a bottling-apparatus 24, arranged so that carbon dioxide is delivered to the bottle to displace the air, and during the admission of the wine, the gas displaced from the bottle passes to the vessel 23. The pipes 11, which convey the wine, may be connected with a steam-supply pipe 28 to cleanse the apparatus.
