Abstract

20,056. Marriott, A. S. Sept. 9. Sterilizing beer &c.- In a continuous process for the pasteurization of beer, stout, &c., the liquid is p u m p e d through a heating - coil c, a cooling-coil e, and a carbonator C in which the gas evolved during heating is re - absorbed and additional carbon dioxide is supplied as required through a pipe n. The coil c is immersed in water heated by a steam-jet, and the coil e is enclosed in sections f, the bottom three sections being connected by pipes i in the apparatus shown. The beer takes about half an hour to pass through the coil c, where it is heated to 140-150‹ F., and the same time to pass through the coil e, where is is cooled to 50-60‹ C. According to the Provisional Specification, ale is cooled to about 40‹ F. and filtered after carbonation.
