Preserving.-In apparatus for pasteurizing or sterilizing bottled beer, beverages, food, and other perishable substances contained in bottles, jars, and other closed receptacles, the substances ate passed through a warming and cooling chamber before and after exposure to the heat of the pasteurizing-chamber. The bottles &c. are passed through the opening d into trays e carried by an endless travelling chain f. The warming and cooling chamber b is divided by a partition j. The pasteurizing-chamber c is provided with a cock l for the admission or escape of air, and with agitators i and perforated. steam pipes h. The chambers b, c are charged with water, which is caused by the paddle k to circulate in a direction opposite to that of the bottles &c. In modifications, (1) three chambers are used, (2) the warming and cooling chamber is made wider, and the bottles &c. pass down and up through it before reaching the pasteurizing-chamber, and (3) the chambers are made long and shallow and are superposed, the course of the bottles &c. being principally in horizontal directions.
