Abstract

Maturing beverages.-In a vat for conditioning champagne or other effervescing fermented beverages under pressure of the type comprising a wooden vessel contained in a casing of steel plate or the like, the liquid is drawn off through a pipe depending from the cover, thus avoiding joints at the bottom of the vat. The wooden vessel f rests on blocks g inside the steel casing a which is fitted with a close fitting cover b carrying the draw-off pipe r, a sampling-pipe m<1>, a pressure gauge, safety-valve and man-hole cover. Gas for raising the pressure in the vat to the required amount is admitted from a cylinder l. Sediment &c. is prevented from entering the pipe r by a tray t through which the pipe passes and a wall s. A plug v and a door u are provided for the escape of carbon dioxide to allow of cleaning &c. The casing a may be formed in halves, the upper of which is removable, and the cover b dispensed with.
