Brewing.-The fermenting-vessels H communicate by a pipe C with a vat B immersed in cooling- vat A and closed by a cover E, which dips into the cooling-liquid in the vat A and seals the vat B from the atmosphere. Froth rises from the fermenting- vessels into the vat B through the pipe C, and the beer condensed from it is returned to the vessels by the other smaller pipe shown. Purified air may be injected into the vat B. The pipe C is made in small sections to facilitate cleaning. Yeast may be collected from the pipe C at a suitable stage of the fermentation. The pressure of carbon dioxide raises the cover E and allows excess of gas to escape through holes e in its periphery. To ensure regular escape of gas, the cover is counterweighted, or a valve may be placed in the cover. Specification No. 2814, A.D. 1856, is referred to.
