Cereal preparations.-Flour or milling products are bleached and improved by the addition either before, during, or after the milling process of " peraldehydes," ozonides, or perozonides or mixtures thereof, or with per-oxy bodies of like character. Detrimental enzymes &c. may be destroyed previously by treatment with active chlorine or a material yielding chlorine. Peroxides, per-salts, other per-compounds or moisture may be added and the mixture may be subjected to chemical or physical treatment to assist the action of the added substance, for example, by exposure to ultra-violet rays.
