A fermentation reaction e.g. the production of wine or beer on a domestic scale by fermentation, is carried out in a disposable bag or sack made from a waterproof sterile material which does not impart flavour to the materials used in the fermentation or to the product of the fermentation, and the neck of the bag or sack is sealed in a manner which prevents air entering from outside but allows gases produced by the fermentation to escape. A fresh sterile bag or sack is used for each fermentation. A bag of polyethylene-nylon laminate containing fermenting liquid, is supported by a metal framework or within a rigid container, and the neck portion of the bag is folded over and held against the support by an elastic band. Alternatively, a clip or clips may be used for the sealing.
