Abstract

A starch-containing fluffy, crisp, and light-textured ready to eat food product is obtained by moistening a gelatinised starch product derived from a starch base selected from root and root-like starches, the gelatinised starch product being characterized by its ability to swell in water at 25‹C. to such an extent that 1 gram of the starch will absorb at least 10 grams of water, shaping the moistened blend, for example by extruding, and cooking by means of a heating process, for example baking, which simultaneously effects a substantial increase in the volume of the product and a marked decrease in its moisture content. There may be incorporated with the starch product other components, such as potato products and vegetable oil, peanut butter, fried bacon bits and bacon drippings, cocoa with softened chocolate and synthetic sweeteners, or a blend of cheese, salt, monosodium glutamate, and mustard, onion, and garlic powders. Suitable starches include tapioca, waxy maize, and waxy milo. The starches may have been hydrolised, oxidised, esterified, etherified and also inhibited (i.e. cross-linked).
