Abstract
Arôme pour aliments. Il est obtenu par réaction du mélange constitué par : a. une source d'amino-acide, b. un acide aliphatique mercaptocarboxylique inférieur ou un de ses sels, et c. de l'oléorésine de sauge, ledit mélange contenant environ 5 à environ 300 parties en poids de la source d'amino-acide par partie en poids d'acide mercaptocarboxylique et environ 0,005 à environ 0,3 partie en poids de l'oléorésine de sauge par partie en poids d'acide mércaptocarboxylique, ledit mélange étant en outre sensiblement exempt de monosaccharide. Cet arôme permet d'impartir aux aliments une saveur analogue à celle du porc.
