Abstract

L'invention a trait à la production de polysaccharides par fermentation de glucides au moyen d'un micro-organisme du genre Xanthomonas. Selon l'invention, après l'étape initiale de formation de l'inoculum, suivie éventuellement d'une étape intermédiaire de croissance du micro-organisme, on utilise dans l'étape finale de production du polysaccharide un milieu de fermentation contenant, comme source d'azote, au moins un produit azoté d'origine organique en quantité, exprimée en gramme d'azote élémentaire par litre de milieu de fermentation, comprise entre 0,01 et 0,3 g/l. Application à la production de polysaccharides fournissant des gels de filtrabilité améliorée.
