Abstract

Procédé pour la stérilisation du lait et des aliments. On stérilise le lait à froid par un traitement dans lequel le peroxyde d'hydrogène, qui est l'agent stérilisant ajouté au lait, est éliminé en faisant passer le lait à travers une masse fibreuse dans les fibriles de laquelle est occluse l'enzyme catalase Ces fibres avec catalase peuvent également être ajoutées en vrac à la masse du lait. Ce traitement évite l'utilisation de la chaleur et prouve qu'il ne reste plus de peroxyde d'hydrogène résiduel dans le lait Les qualités organoleptiques et le gout du lait ne sont pas du tout altérés par ce traitement. Utilisation de ce procédé pour stériliser le lait et des aliments qui se trouvent à l'état liquide ou en suspension aqueuse.
