METODO DE PRODUCIR UN VINO DE BAJO CONTENIDO EN ALCOHOL. CONSISTE EN: 1) TRATAR MOSTO DE UVA SIN FERMENTAR CON UNA PREPARACION DE GLUCOSA-OXIDASA EN PRESENCIA DE OXIGENO HASTA QUE AL MENOS UNA CANTIDAD MENOR DE GLUCOSA SE CONVIERTA EN ACIDO GLUCONICO, REALIZANDOSE A UNA TEMPERATURA ENTRE 5 Y 25JC, DESPUES DE LO CUAL; 2) SE FERMENTA EL ZUMO DE UVA ASI TRATADO, DEFICIENTE EN GLUCOSA, PARA PRODUCIR EL VINO DE BAJO CONTENIDO EN ALCOHOL, POR LO QUE EL ACIDO GLUCONICO SE ELIMINA PARCIALMENTE HASTA CONSEGUIR PROPIEDADES ORGANOLEPTICAS DESEADAS; DONDE LA PREPARACION DE GLUCOSA-OXIDASA USADA TIENE UNA ACTIVIDAD Y ESTABILIDAD RELATIVAMENTE ALTAS EN EL INTERVALO DE PH COMPRENDIDO ENTRE 3 Y 4. TIENE UTILIDAD PARA PREPARAR VINOS DE MESA, ASI COMO ESPUMOSOS CON BAJO CONTENIDO EN ALCOHOL.
