Abstract

Procedimiento de vinificación en tinto y cube cerrada para la puesta en practica de este procedimiento, que incluye una primera fermentación del mosto una vez separado del orujo y que se caracteriza porque durante la primera fermentación, el mosto se subirá desde la parte baja de la cuba y se vertera a la parte alta de la misma, en ciclos continuos o periódicos, de manera que se provoque su peso a través de casquete formado por el orujo, que se conserva en la cuba.
