Abstract
PURPOSE: When the preparation is done for making Japanese sake, fruits are mixed and the fermentation is effected, thus producing Japanese sake having taste characteristic in the fruit.
CONSTITUTION: When Japanese sake is made by a usual method, a part of steamed rice is substituted with a fruit produced in each area in Japan, such as grape, peach, strawberry, apricot, loquat, mulberry, banana, pineapple, musk melon or water melon, and they are caused to undertake fermentation. On the finishing period, honey is added to adjust the taste of the fruit and simultaneously heated, thus producing the objective product. Further, the cake after filter pressing can be distilled as in the manner to make brandy to give a brandy of the fruit liquor.
