Abstract
Procedimientos perfeccionado de preparación y envasado de huesos, caracterizado porque la materia prima, compuesta por huesos de extremidades de cerdo, vacuno y ovino, es sometida a un procedo operativo en el que la primera fase consiste en una salmuerización en baño de solución acuosa de: Sal común, 2 a 5%, sales nitrificantes, sales tamponantes, azúcares y enzimas proteolíticas. Permaneciendo los huesos sumergidos en este baño a temperatura no superior a 10ºC., durante un periodo de 18 a 24 horas, tras lo cual se pasa a la segunda fase en la que al vacío, se empaquetan en bolsas herméticas, de paredes flexibles, termosellables, constituidas por planchas de láminas triples (plástico-aluminio-plástico), tras cuyo cierre por termosellado se pasa a la fase siguiente en la que se efectúa un tratamiento térmico a temperaturas comprendidas entre los 10ºC y 116ºC., y a contrapresión de 1,8 Kg./cm2 en autoclave durante 20 minutos.
