Abstract
Procedimiento para la producción de una masa de panificación y de relleno para alimentos y estimulantes, que contiene habas de soja y azúcar, caracterizado por tratarse primeramente con agua caliente habas de soja mondadas y desamargadas eventualmente en presencia de aditivos ácidos, en una relación núcleos de aprox. 1 a 3, separarse de la masa de habas de soja la fase de agua ácida, lavarse aquella con agua fría hasta conseguir que las lavazas sean casi neutras y mezclar dicha masa que contiene 48 a 54% en peso de agua aprox. mezclarse con agitación y con desmenuzamiento simultanea con 51% en peso a lo sumo de azúcar respecto al peso del producto fina y 2 a 4% en peso albúmina de soja también respecto al peso del producto final, así como eventualmente pequeñas porciones de aceites comestibles, calentarsela, evaporarse el agua sobrante y solidificarse la masa enfriada hasta unos 50ºC, que contiene 18 a 26% en peso de masa de habas de soja, de 18 a 24 en peso de agua y 51% en peso como máximo de azúcar.
