Abstract

Procedimiento para la preparación de un granulado alimenticio, que utiliza como ingredientes, agua, azúcar, cacao en polvo desengrasado, canela en polvo, dextrosa, fécula de maíz, harina de trigo, lecitina de soja, levadura y sal, más aroma, para la realización secuencias de las siguientes operaciones: a) Mezcla de los ingredientes y amasado de los mismos hasta la obtención de una masa fina y elástica; b) División de la masa en porciones de pesos equivalentes; c) Boleado de las porciones de masa para la recomposición de la estructura del gluten; d) Colocación de las bolas de masa en una cámara de fermentación de ambiente controlado, a la temperatura de 30ºC, humedad del 75% y durante 90 minutos; e) Cocción de las bolas de masa en un horno, a la temperatura de 250ºC, durante 40 minutos; f) Reposo de las bolas de masa para su enfriamiento hasta la temperatura ambiente; g) Troceado del producto para facilitar su secado; h) Secado por aplicación al producto fragmentado de una corriente de airecaliente a 280ºC, hasta limitar la humedad a un valor máximo del 81; i) Enfriamiento del producto hasta la temperatura de 50ºC; j) Molido del producto para la formación de gránulos y tamizado de los mismos hasta obtener una granulometría uniforme.
